Blueberry Breakfast Cake!!

Sean loves to have a muffin in the morning before he goes to work; so to change things up a bit for him I decided a breakfast cake was in order. (NOTE TO SELF: Blueberries will fall out of your basket if you put them upside down in the grocery store) Making a breakfast cake is actually pretty simple especially if you are good at keeping your staple materials at home (Flour, Sugar, ext…)DSC01618 Here’s what you need…

Ingredients: Serves 6-8

½ cup unsalted butter, room temperature
7/8 cup* + 1 tablespoon sugar**
1 egg, room temperature
1 tsp. vanilla
2 cups flour (set aside 1/4 cup of this to toss with the blueberries)
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries
½ cup buttermilk

* 7/8 cup = 3/4 cup + 2 tablespoons
** This 1 tablespoon is for sprinkling on top

Simple enough right!?!?! So once you have all your ingredients in your house (yes I had to go buy eggs and buttermilk, we are not really an egg eating family when I can’t stand the smell of them right now) get ready to make some super yummy breakfast cake. The best part about the whole thing is that its only about a 15 min prep time before you have it in the oven. (Another NOTE TO SELF: remember to read all the directions and not skip over any like step two which is kind of really important) So here is what you do…


1. Preheat the oven to 350ºF.

2. Cream butter with and 7/8 cup of the sugar until light and fluffy.

3. Add the egg and vanilla and beat until combined.

4. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt.

5. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries.

6. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 to 45 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.

That’s it nice and simple and yet super delicious. Hope you enjoy!!


Goodbye Second Trimester

Well I can’t believe it but the time has come to say goodbye to my second trimester. This has been a great three months filled with lots of changes that were all for the better. Now onto some of my favorite things about this trimester…

  1. Coconut oil-coconut_oil I ran out of Momma mio products and didn’t really feel like paying another $80 for a whole set again. Instead I have switched to using coconut oil to help me not get stretch marks super bad. Of course this is all just in me hoping, there is no scientific proof that using any product will truly help reduce the amount of stretch marks you obtain. I do plan on buying another round of Momma Mio within the next couple weeks to use during the final stages of my pregnancy. I enjoy the smell and it does feel very soothing to the skin especially the Boob tube bottle that helps with the slight pain I have been feeling with my nipples lately. Sorry for the TMI!!
  2. My bump- It was so fun to be able to finally tell that I was pregnant and not just put on some weight. I have been very lucky and only gained 12 pounds at the moment which is right on track for a healthy pregnancy. I am not really worried about my weight or anything but there was a time there for awhile where all I felt like was fat not pregnant. Now that I have a cute bump to look at all the time I find myself staring in the mirror a lot and I do mean a LOT!!!
  3. downloadNew clothes- Now that I officially can’t fit into any of my pre-pregnancy clothes I have truly loved shopping for a few new shirts and bottoms. My mom and I found this great little consignment store where we live called the little red wagon; its actually a child’s consignment store but there is a small section of maternity clothes there as well. I found my two favorite shirts here. One is originally from the gap and the other is a no brand shirt that is just the most comfortable thing I have ever worn. I also got a chance to go shopping in Victoria with my sister at old navy when I went to visit her earlier this month. They were having a sale so I got three fall/winter tops all for about $56!! Now all I need is a new coat because I can hardly zip mine up and its just beginning to get cold out.
  4. DSC01595Finding out babies gender- The absolute best part about this whole trimester however was when Sean and I found out we are going to be having a BOY!!! We had the first ultrasound of the day so it was about 7 am when I climbed onto the table to start the anatomy scan. I figured that the technician would tell us toward the end of the appointment what we were having but instead by 7:05 we knew the gender. Sean’s face was priceless and I don’t think he looked away from the screen once during our hour long appointment with her. I was not surprised that it was a boy of course because of that dream I had earlier. I just had this overwhelming feeling that it would indeed be a boy. So I was happy to see my mommy instincts are already kicking in.

So there you have it. A very amazing and fun filled second trimester has come to an end! It’s now onto figuring out a baby name and fixing up his nursery. I can’t believe I am in the home stretch of this amazing miracle God blessed us with!

Family Traditions (Maternity and Newborns)

book_of_new_family_tradI just finished reading this very thought provoking book about family traditions. It got me thinking about all the family traditions I want to pass on to my little one who will be here sooner then I can imagine. I know there will be the basics like Christmas, Thanksgiving, and Easter; but what about those every day traditions that I could start??

I love the fact that I am starting this process before our first child even has arrived yet. This makes it so that all he will ever know is tradition in our little family. Here are a few of the ideas I have churning in my head….

Maternity and Newborns:

  1. The first tradition that is already currently under works for my little one is a very special nursery designed just for him. Now obviously this tradition is more for Sean and myself to enjoy because the chances of him remembering his nursery decor are slim to zip with the exceptions of the pictures he will see of it.Nursery That being said this simple act of choosing what your little one gets to come home to can be very rewarding and it inspires you to think of the things he (or she) would like if they were able to tell you themselves. Plus its just a fun experience!! I am lucky enough to have a sweet guy who is into helping me decide what should or should not be used for our decor. Everything I pick out I check with him to make sure he likes. This makes the process that much more special because its the combining of both of us. It becomes a tradition when our next child is due to arrive (at least two years from now FYI) and we once again choose a specific theme for him/her to come home to!
  2. Pregnancy Album-DSC01603 I knew right when I got pregnant that I would be making a pregnancy album to be able to share with my little one once he is older to enjoy it. It also marks itself as a reminder of those special nine months that he has spent inside me! These special albums could be as simple as just a picture a week with some basic info of what was going on during that specific week in pregnancy all the way to an elaborate scrapbook of your nine month journey (I am doing the later option). You can include things like poems that mean something to you and if your anything like me all those extra ultrasound pictures you received. Either way its a sweet tradition to start and keep up with during every pregnancy you go through.
  3. Maternity Photo Shoot- A tradition I really want to start is making sure that Sean and I take part in a Maternity photo shoot for every child we are expecting. Nursery1The goal here is just to have fun and have great memories to keep for whatever you use your photos for. Mine will be a combination of adding to my pregnancy album and choosing one or two of the best shots to be hung on the wall! There are tons of photographers out there that will combine your maternity and newborn shots into one package deal. Thus of course saving your a little extra dough while your at it. I highly recommend that you spend some time looking online at some options for what your shoot could be like. This makes it so much more personal and will scream YOU to anyone who sees the photos!
  4. BIRTH-Day!! I honestly can’t wait for when our little one is here and I get to start his “birthday” off right! The goal here is to celebrate his arrival to his family. I am going to have someone bring a simple cupcake with a candle that has the number Zero on it. Then take a picture like this…4a98b765ed21813febc3403c51a67fb0 Afterwards Sean and I will each take a bite from the cupcake to celebrate his birth! I feel like this simple act is going to be such a meaningful tradition and a great picture to look back on!
  5. The Twelve Months Of (Insert Your child’s Name Here)- The last tradition I want to share with you for this category is the simple and fun act of taking a photo a month of your newborn and in some way document the changes that are happening to him/her. For Sean and me, I think that we will be doing something like this…bebf6de5e2b6488a9a66a114d314dcbfIt could be a lot like the pictures you took during your pregnancy but the one thing that is important here is that you put your child next to the same object every month so you can physically see the growth happening! I love the idea of using the chalkboard but ours is already hung up in the nursery so we will see if that’s the object we choose to use or not. It might be the corner of our couch with a stuffed animal and blanket and then I would just write the info on the picture itself through Picasa.

Traditions don’t have to always be the Huge events in life; sometimes its celebrating the little things. I know growing up we had a few traditions we did when I was younger and once my parents changed career direction I truly missed out on a ton of opportunities to celebrate a family tradition. I vowed never to do that with my own family and I think these 5 new traditions will be a fun start!!

Summer 2013 Books

This summer I attempted to get as much read as possible before my little one comes and all my free time will be consumed in loving him. Just so you understand ahead of time I am not a fast reader. I grew up needing special classes to work on my reading skills when I was in elementary and early middle school. For this reason I am a horrible speller (without spell check I would be seriously lost) and there are times I still can’t pronounce a word right. So my ability to get four books read in a single summer is AMAZING for me.

Now back to the point of this post…

Mexican Doritos Casserole

WARNING: This recipe is not for anyone who is looking for a healthy meal!! I tend to make this meal once every couple months for a nice treat!


  • 2 chopped up cooked chicken breasts
  • 1 c. shredded cheese (or more if you are a cheese hound)
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/2 packet taco seasoning (or more- to taste)
  • Bag of Doritos
  • Rice (Enough for your family)

Cooking Instructions:

1. Pre-heat oven to 350-f degrees.

2. In a mixing bowl, combine all ingredients except Doritos.

3. In a greased 2 qt baking dish, put a layer of crushed Doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.

4. While baking casserole make rice so both are done at the same time

5. Layer your yummy Doritos chicken over rice and enjoy!

Finally Can Catch My Breath!!

This has been a whirlwind of a month and its not even close to over yet!!

For me however I am finally able to catch my breath. But just to show you a little about what its been like for me so far here is what my schedule looked like

September 3- Last day of work at Northwood

September 4- Anatomy Scan (Gender reveal)

September 4- Breakfast with my parents then going to see me Grandma then finally getting home and calling Sean’s parents about the news

September 6- Left for Victoria because we though for sure my sister would deliver my niece early

September 6- Pedicures so my sister would have pretty feet in the delivery room

September 7&8- Watched my nephew Zack practice hockey attempted to make my sister go into labour

September 9& 10- Spent time with my sister

September 11- Went with Val to her doctors appointment and the non stress test exam, no baby and I had to leave

September 11- Head back home from Victoria

September 12- Terra’s (BFF) Rehearsal Dinner for her wedding all the way in Anacortes

September 13- Terra’s Bachelorette party

September 14- Sean and I bought high chair and stroller at Babies-R-Us

September 14- Left for Anacortes for the night with Terra

September 15- Terra’s Wedding

Needless to say I am not use to being that busy all the time (good practice for when my little guy comes in January I know). It went by fast and I now get to start looking for a seasonal job until January.

My sister as of this morning has still not delivered my niece. Her due date way on the 17th and her doctors say that by next Wednesday they will talk about inducing her.

And it’s A….


Sean and I went into my doctor’s appointment last Wednesday where we got to spend over an hour starring at our precious little guy. The technician told us the sex right away do that made it even better for us. The look on Sean’s face was priceless. I don’t think he looked away from the screen once during that whole hour. Everything went great except our little guy was so curled up the technician could measure his head. So I had to lie on my side then got flipped upside down for a minute anything to make baby move. Well he didn’t like when I was flipped upside down and started kicking me like crazy. After I got up and used the washroom everything worked out fine. Seriously might have been  the best hour of my life so far.

We then had my actual doctor’s appointment where we pretty much got told that our son was an over achiever!!! He scored perfectly on his anatomy scan and he had low risks for any disorders. In fact the average for a pregnant women my age to have a baby with down syndrome is like 1 in 3500 and my son’s risks are 1 in over 5000!!! Go me!! And the last thing she informed us of was that my placenta was rated a 0 which is the best score you can get.

All in all our anatomy scan day was amazing and I am so happy to learn that come January Sean and I will be welcoming a little guy into our family!!!
